Pumpkin Pizza, Vegetarian Style

Here’s an alternative recipe to your everyday cheese pizza. Surprisingly enough, this is some of the best pizza I have ever had. It’s a little bit of work, but it’s definitely worth it! Ingredients: • 1 ¼ cups of roasted pumpkin, cubed • 1 tsp of basil pesto • ¾ cup of prepared pizza dough • ¼ cup of grated cheese (mozzarella tastes the best!) • 2 Tbsp almonds (or cashews), crushed • 1 ¼ Tbsp white cream sauce • 2 ½ Tbsp goat cheese, crumbled • 2 ½ Tbsp Parmesan cheese, grated • 1 tsp fresh chopped parsley • 2 tsp extra almonds (or cashews), chopped Pre-heat the oven to 500 degrees. Lightly toss the roasted pumpkin and basil pesto and set aside. Next, roll out the pizza dough and evenly spread with a layer of the mozzarella cheese. Add the crushed almonds or cashews and the cubed pumpkin. Drizzle the white cream sauce on top. Scatter the goat and Parmesan cheese evenly over the surface. Cook the pizza for seven to ten minutes at 500 degrees Fahrenheit. Once done baking, remove from the oven and garnish with parsley, extra almonds or cashews and Parmesan cheese. Slice before serving and enjoy!
