Charlie’s recipe originated back in the day, with a little inspiration from Grateful Dead concerts.[in his words]: “Just going and hanging out in the parking lot wasn’t that much fun, so I decided that I would get a flat top grill. My girlfriend and I came up with ideas for cooking. We did pancakes in the morning, and the falafels at night, which were very successful.” “I became a vegetarian because of moral choices. I could not disassociate meat with where it came from. That was the main reason for me to start cooking, was in order to get food that I like, I had to make it myself.” “The karma is very good [here]. I’ve done a lot of other things for a living and I never felt very good about those jobs. Although I was making more money, at the end of the day, I looked at what I had accomplished, and it wasn’t on the same scale. So I feel very lucky to have the job I have right now.”
